In my busy life I have come to enjoy fast one dish meals that you add a salad to and enjoy. This is that kind of meal, it is a good blend of flavors. If you are on a low salt diet use cooked chopped chicken in place of the ham

Ingredients For potato and ham frittata

12 oz( about 3 cups ) frozen hash brown potatoes

1 tspcajun seasoning
-
4egg whites
-
2eggs
-
1/4 cmilk
-
1 tspdry mustard
-
1/4 tspblack pepper

10 oz( about 3 cups ) frozen stir-fry vegetable blend

13 cwater
-
3/4 cchopped lean ham or chicken
-
1/2 c( 2 oz ) shredded cheddar cheese
How To Make potato and ham frittata

1Preheat oven to 400 degrees, Spray baking sheet with nonstick cooking spray. Spread potatoes on baking sheet, sprinkle with Cajun seasoning. Bake for 15 minutes or until hot. Remove from oven and reduce oven temperature to 350.

2Beat egg whites, eggs, milk, mustard and pepper in a small bowl and set aside. Place vegetables and water in medium ovenproof nonstick skillet. Cook over medium heat for 5 minutes or until vegetables are crisp-tender, then drain.

3Add ham or ( chicken ) and potatoes to vegetables in skillet, stir lightly. Add egg mixture, Sprinkle with cheese. Cook over medium low heat for 5 minutes. Place skillet into oven and bake 5 minutes or until egg mixture is set and cheese is melted. Cut into 4 wedges and serve.
