country style ribs are little different than loin baby back pork spareribs, but they're always pork. The original cut called country style ribs, came from the last three or four rib bones at the end of the pork loin. They were butterflied, kind of like a split pork chop. But as consumer preferences change, so do the options in the meat case. The butcher can't cup a full slab of loin back ribs and those three or four country ribs on the same side of a hog and back ribs are very popular so you won't find the original country ribs very often anymore.Source: Unknown

Ingredients For grilled country ribs with sautéed apples

  • apples:
  • four large rome apples
  • one half stick butter
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • eight country style ribs
  • rib rub number 99, as needed, recipe follows

How To Make grilled country ribs with sautéed apples

    to make the apples, cored the apples and cut them into 1/2 inch cubes, leaving the skin on. In a large skillet over medium heat, melt butter. Add the apples and cook for five minutes, stirring often. Add the Brown sugar, cinnamon, and salt and mix well. Cook for another 15 minutes, stirring often, until the apples are soft. Set aside and keep warm.

    Season the ribs liberally on both sides with the rib rub. Prepare the grill for cooking over direct medium heat. Place the ribs directly over cooking grate. Cook the ribs for four minutes. Flip and cook for another four minutes. Flip again and cook for another three minutes. Flip one final time and cook for another three minutes or to your desired degree of doneness. Remove to a platter and let rest for five minutes. Add the warm apples to the platter and serve. Serves four.

    rib rub number 99: 3/4 cup sugar in the raw 1/2 cup salt 1/4 cup paprika 2 tablespoons finely ground black pepper 1 tablespoon granulated garlic 1 tablespoon onion powder 1 tablespoon ground cumin 1 tablespoon chili powder 1 teaspoon dry mustard 1 teaspoon ground coriander 1/2 teaspoon cayenne pepper 1/2 teaspoon ground allspice mix all ingredients well and store in an airtight container. Makes about 1 1/2 cups
