I like to make this on new years day instead of the traditional black eyed peas.

Ingredients For black-eyed pea casserole

  • 2 (15 oz) can
    black eyed peas -- drained
  • 1 sm
    onion -- chopped
  • 1 lb
    hot pork sausage -- browned
  • 1 can
    rotel tomatoes
  • 2 box
    jiffy cornbread mix
  • chedder cheese -- shredded

How To Make black-eyed pea casserole

  • 1
    Brown your sausage, onions, and set aside.
  • 2
    Mix peas, rotel, and sausage mixture together in a casserole dish.
  • 3
    Mix cornbread mix per directions and pour over top of mixture.
  • 4
    Place in 350 degree over and bake until corn bread is done.

    Remove from oven and cover liberally with cheese. Place back in oven and melt cheese.
