apple butter barbecued pork chops

This is my daughter DeLena's recipe. She does a lot of cooking for two. She makes these up with ingredients she has on hand. I am including it in the cookbook I am making her of all her favorite recipes.

Ingredients For apple butter barbecued pork chops

  • 2
    thick pork chops, about 6-8 oz each
  • 1 1/4 tsp
    chili powder
  • 1 1/4 tsp
    cinnamon
  • 1/2 tsp
    cumin
  • 4 Tbsp
    butter, divided
  • 1/2 c
    apple butter
  • 2-4 Tbsp
    apple cider vinegar

How To Make apple butter barbecued pork chops

    Combine the cinnamon, chili powder, and cumin in a small bowl. Use as a rub on the pork chops, coating them thickly on both sides and rubbing in well.

    Heat 2 tablespoons of the butter in a non-stick skillet over medium high heat. Sear the pork chops well on all sides, including the edges if they are very thick. Lower heat to medium.

    Spread some of the apple butter on top of the pork chops in the skillet and cook 2-3 minutes. Turn pork chops over and spread the other side with more apple butter, and cook 2-3 more minutes.

    Add the rest of the apple butter, half the vinegar, and the rest of the butter to the skillet. Stir well and cook over low heat until the pork chops are done, adding the rest of the cider vinegar as needed to prevent sticking and to make it saucy. Place pork chops on plates and spoon the sauce over.
