Recipe compliments of the Wendish Heritage Society of Texas. The Wends are a Slavic sect from Lusaitia, now part of eastern Germany, who immigrated to Central Texas in 1854 to escape persecution by the Prussians. The settlers formed a community near Gidding, TX where they could speak their own language and practice their Lutheran faith. Ingredients For wendish noodles (traditional style)

  • NOODLES
  • 1 lg
    egg
  • 3 Tbsp
    water
  • 1-1/2 to 2 c
    white flour
  • COOKED NOODLES:
  • 5 c
    chicken or vegatable broth
  • 1 stick
    butter
  • 1 pinch
    nutmeg (optional)
  • 1 c
    fresh chopped parslely

How To Make wendish noodles (traditional style)

    TO MAKE NOODLES: Beat egg and water together Add flour until you get a stiff dough Turn out onto floured surface and roll into thin rectangle Allow to set until stiff, but not dry Cut into noodle strips If you have one, you can use a pasta machine

    COOKED NOODLES: Bring broth to a rolling boil, add the butter and the pinch of nutmeg When butter is melted, add noodles Cook for 10 minutes Add chopped parsley and serve

    ALTERNATE COOKING METHOD: Cook the noodles for 3-4 minutes as directed above, turn off the heat, cover with foil and a lid and let stand for several minutes before serving (steam and hot broth will finish the cooking) This method allows the noodles to absorb more of the broth while steaming
