I can't remember where I found this recipe, but I have been making it for some time now. My family loves it and it is made with things that I usually have on hand. It is quick and easy and tastes good too!

Ingredients For mexican goulash

  • 1 lb
    ground beef
  • 1/2
    onion, chopped
  • 1 (12 oz.) pkg
    elbow macaroni, cooked & drained
  • 1/2 lb
    processed cheese, diced
  • 1 1/2 c
    salsa
  • 1 (15 oz.) can
    pinto beans, drained, rinsed
  • 1 (15 oz.) can
    whole kernel corn, drained

How To Make mexican goulash

  • 1
    Cook the ground beef and onion together in a large skillet over medium heat until completely browned and crumbled. Drain off fat.

    Add the macaroni to the beef and place over medium-low heat; stir in the cheese until melted.

    Add remaining ingredients; stir and heat until mixture bubbles slightly. Serve hot.
