mac n cheese (fondue style)

Yeah, its amazing what can come out of the kitchen when I am out of my staple groceries. Here I am again, cleaning out the cupboards and the fridge. Easily serves 2 as a lunch, or 4 sides for dinner. Could use any cheese combination, I found this combo tasted amazingly like my favorite german cheese fondue.

Ingredients For mac n cheese (fondue style)

  • 1/2 lb
    penne pasta
  • SAUCE
  • 1/4 c
    butter, melted
  • 1/4 c
    flour
  • salt and pepper to taste
  • 1/8 tsp
    nutmeg
  • 1/2 tsp
    garlic
  • 1/2 c
    mozzarella cheese, grated
  • 1/2 c
    parmesan cheese or romano cheese
  • 1/2 c
    sharp cheddar cheese, grated
  • 1/2 c
    cream cheese, room temperature
  • 1/2 c
    dry white wine
  • milk, enough to make it saucy (a few cups)

How To Make mac n cheese (fondue style)

    Boil the pasta for 8-10 min till aldente. Drain pasta and set aside.

    In a large sauce pan on med-high, melt the butter and stir in the flour. Add the spices and garlic. Stir and cook long enough for the flour to turn a light golden color.

    Add the wine and the cheese quickly. Start adding the milk slowly. Whisk continuously while bringing to a boil, the whole pot will become saucy and so amazingly aromatic.

    Slide pasta into the cheese sauce and stir to incorporate.
