easy seafood linguini

I love seafood, so I made this years ago and still get raves for it. I serve it w/ crusty Italian bread.

Ingredients For easy seafood linguini

  • 1 lb
    sea scallops, cut in 1/2
  • 1/2 lb
    fresh medium shrimp, peeled, deveined
  • 1
    6 oz pkg frozen pea pods, thawed
  • 1/2 c
    sliced green onion
  • 3 tsp
    minced garlic
  • 3 Tbsp
    olive oil
  • 3 Tbsp
    butter
  • 2 tsp
    dried parsley
  • 1 tsp
    dried basil
  • 1/2 tsp
    crushed red pepper flakes
  • 1/4 c
    oil-packed dried tomatoes, drained, cut into strips
  • 10 oz
    linguini
  • 3 Tbsp
    grated parmesan cheese

How To Make easy seafood linguini

    Cook pasta as directed, drain, keep warm. In bowl, combine scallops and shrimp, set aside. Cut pea pods in 1/2, set aside.

    In skillet, over med-high heat add oil and butter. Add green onions and garlic, cook for 1 min. Add 1/2 of the seafood mix, parsley, basil, and red pepper. Cook, stirring until scallops are opaque and shrimp is pink. Remove seafood w/ slotted spoon.

    Repeat w/ remaining seafood. Return all seafood to skillet. Add pea pods ad tomatoes. Cook, stirring for 2 min. In lg bowl, toss linguini w/ seafood mix. Sprinkle w/ parmesan cheese.
