My mother made this for us growing up and I have made it for my family. It has passed the test of time. Great comfort food, very easy and yummy.

Ingredients For cowboy casserole

  • 1 lb
    ground beef
  • 8 oz
    macaroni, elbow
  • 15 oz
    kidney beans, canned
  • 15 oz
    corn, canned
  • 10 3/4 oz
    tomato soup
  • 8 oz
    cheddar cheese, shredded
  • 1 Tbsp
    chili powder

How To Make cowboy casserole

    Brown and drain gound beef. Boil and drain macaroni.

    Mix corn (drained) with kidney beans (not drained), tomato soup, half of the cheese and chili pepper.

    Add in the ground beef and macaroni, mixing well.

    Bake in a 13x9 baking dish at 350F for 25 minutes. After 25 minutes, sprinkle remianing cheese on top and bake an additional 5 minutes.
