My daughter made this for one time knowing I love anything spicy. She gave me the recipe, which made me happy, because now I can make it whenever I want, yummy!

Ingredients For cajun mac and cheese

  • 1 lb
    ronzoni garden delight elbow macaroni
  • 1 Tbsp
    olive or canola oil
  • 1 md
    onion, finely chopped
  • 1 md
    green bell pepper, finley chopped
  • 1 lb
    regular or turkey kielbasa, sliced
  • salt and pepper to taste
  • 1 tsp
    minced garlic
  • 1 Tbsp
    flour
  • 1-1/2 c
    milk, i used 2%
  • 4 oz
    reduced-fat cream cheese
  • 2 tsp
    cajun seasoning
  • 8 oz
    reduced-fat extra sharp cheddar cheese
  • 8 oz
    shredded gruyere cheese

How To Make cajun mac and cheese

    Heat oven to 425. Spray a 3-quart baking dish w/ cooking spray. Cook pasta as directed and drain.Heat oil in lg skillet over medium heat. Add onion, and bell pepper. In another skillet sprayed w/ cooking spray, cook kielbasa until done. Remove pan from heat.

    Add 3/4 tsp salt and 1/4 tsp pepper to onion and bell pepper mix. Cook, covered, stirring occasioanlly until tender. Stir in garlic, cook 1 min. Sprinkle flour over veggies and stir 1 mins.

    Whisk the milk into veggie mix and bring to a simmer. Whisk in cream cheese and cajun seasoning. Stir in both cheeses and simmer, stirring occasioanlly, until cheese is melted and mix is slightly thickened. Toss the pasta w/ the cheese mix, stir in kielbasa. Transfer to baking dish and cook until golden, about 10-12 mins.
