This is also called Garbage Caserole or Left Over Caserole because you can throw any left over vegetable you have in your fridge in it. I tried to come up with a more pleasant name...lol. This is a recipe I got from an elderly friend of mine years ago. She always took this to the church potluck dinners and it was awesome. It goes great with my Irish Soda Bread.

Ingredients For veggie soup caserole

8potatoes, peeld and cubed
-
1 lbhamburger, browned
-
2 canabout 10.75 each of condensed vegetable soup

2 cmixed vegetables or leftover vegetables you have in the fridge
How To Make veggie soup caserole

1Preheat oven to 350 degrees.

2Mix all the ingredients together in a bowl.

3Pour into 9 x 13 baking pan.

4Cover with aluminum foil.

5Bake at 350 for about 35 - 45 minutes or until potatoes are soft.
