Yes, I said french fry po-boy. You ever have that left over gravy with those little bits of roast in it....call it debris gravy. This is the perfect sandwich to use up that gravy. This is a New Orleans classic sandwich.

Ingredients For french fry po-boy

  • 2 c
    french fries
  • 12
    inch new orleans styly po-boy bread (binder's is the best)
  • 1/2 c
    brown gravy, with bits of roast
  • mayonnaise
  • shredded lettuce
  • dill pickle chips

How To Make french fry po-boy

    Cook fries very crispy, deep fried s best.

    Slice bread down the middle and spread desired amount of mayo.

    Place hot french fries on bread and cover with gravy. I said a half cup but I'm sure I use more, I love tons of gravy. The old saying goes, you know a po-boy is good if the gravy is dripping from your elbows.

    "Dress" sandwich with lettuce and pickles.....and any other condiments you like...tomatoes, onions, etc.....Cheese is good too
