I named this dish after my husband because while we were at the store he spotted these poblano’s and said “ honey you could rock these “ so I just had to buy them, he really didn’t need to twist my arm ha ha ha. 3 will be on the dinner table today and the rest are in the freezer for other dishes! When you have such a favorable and spicy filling the Poblano pepper is the perfect choice. It will give you great flavor without any added heat. If you don't want to make the cheese spread, drain a jar of your favorite salsa and use that. HOTTSIE TOTTSIE DIPSIE DOOOO CHEESE SPREAD HERE ON JAP.

Ingredients For come meet poblano bill

  • 3 gorgeous poblano peppers
  • 3 or 4 bonless pork country ribs { i used 4 because they were on the small side}
  • 1 bag instant rice
  • 1 quart v8
  • ½ of a medium or 1 small onion chopped
  • 3 cloves roasted garlic { smashed }
  • 1 tablespoon fine sea salt
  • 1 tablespoon fresh ground pepper
  • 1 -12 ounce can vernor’s gingerale or seagrams gingerale
  • 1 cup of hottsie tottsie dipsie doooo cheese spread { recipe on jap }
  • about 6 ounces { ½ package }queso fresco cheese

How To Make come meet poblano bill

    Put the V8 into a pot along with the onion, garlic and boneless country ribs. Cover and simmer for about 2 & ½ hours or until the ribs are tender. After that let them cool in the juice, then remove them {DO NOT DISCARD THE JUICE } and shred the pork with two forks.

    Cook the rice in the ginger ale, when the rice is fully cooked, add it to the shredded pork and cheese mixture, mix thoroughly.

    Reduce the remaining V8. Keep about 1 cup out of the reduced sauce and leave a small amount of the sauce on the bottom.

    With a small paring knife make a pocket in each one of the peppers, saving the part you remove, and with your fingers carefully remove the seeds and some of the ribs. . Try not to put any holes in the bottoms of the peppers if you can.

    Fill with the pork mixture, packing as much as you can into the peppers.

    Put the stuffed peppers into the pan.

    Top them with a tablespoon of the reduced sauce.

    Put the part that you removed from the peppers back on top add the remaining sauce.

    Go wild and top them with lots of the cheese and bake 350 for 1 hour & 15 minutes, then uncover and bake for 15 minutes longer. This of course depends on your oven.
