This is an easy recipe to make and it is very good! My grandchildren helped create this recipe... so I think it is "kid friendly". I like incorporating vegetables into my recipes to help get our daily intake of vegetables into our diets. Adding vegetables also boost the volume of the food and give added flavor and texture. Ingredients For chorizo chili mac

  • PASTA
  • 2 lb
    macaroni, elbow (any pasta will work)
  • CHORIZO
  • 2 lb
    chorizo (mexican sausage, mild or medium
  • 1 lg
    onion (diced)
  • 10 clove
    garlic (whole or diced)
  • 2
    yellow crooked neck squash
  • 1 tsp
    ground black pepper
  • 2 tsp
    each: ground cumin,garlic powder
  • 1/4 tsp
    ground cayenne pepper
  • 1 can
    tomato paste (6ounces)
  • 3 can
    water (use tomato paste can to measure)
  • 2 can
    black beans
  • 2 can
    tomatoes (diced)

How To Make chorizo chili mac

    1 box or bag (2 pounds) elbow macaroni. Cook elbow macaroni as directed on box.

    Drain and rinse the pasta in a colander. Set aside.
  • Chorizo, yellow squash, onion, garlic.

    While the elbow macaroni is cooking: In a large skillet, cook the chorizo, onion, garlic and yellow squash until cooked (about 10 minutes).

    Add the diced tomatoes, tomato paste, water and spices. Simmer 5 minutes.

    Put some elbow macaroni into bottom of bowls. Scoop Chorizo Sauce mixture on top of elbow Macaroni.

    Serve! *** You can also add some pasta to the other ingredients, but I prefer not to. *** optional: taco toppings to garnish.
