Ingredients For black beans and shrimp

  • 1 lb
    frozen cooked medium shrimp, thawed
  • 1 can
    black beans, drained
  • 1 md
    onion, diced
  • 2-3 clove
    garlic, minced
  • 1
    chipotle pepper in adobo sauce, minced, with about 1 tsp of the adobo sauce added
  • 1 tsp
    old bay seasoning
  • vegetable oil
  • cooked white rice

How To Make black beans and shrimp

    Heat approx. 1 Tablespoon of oil in a large non-stick pan over medium heat. Add diced onion and sauté approx. 1 minute. Add garlic and sauté. Be careful not to let garlic burn!

    Add black beans and stir to combine with the onion and garlic. Add chipotle pepper, adobo sauce and Old Bay seasoning. Stir to combine. Let cook another minute or so, then add shrimp. Cook until heated through, stirring occasionally.
