This is one of my favorite recipes that my mom came across one day. She doesn't like ground meat, so she loves it too!

Ingredients For veggie tacos
-
zuccini
-
squash, fresh
-
red onions/or just onions
-
roma tomatoes
-
green peppers
-
olive oil, extra virgin
-
package of taco seasoning
-
taco shells
-
refried beans
How To Make veggie tacos

1Chop all veggies and place in large bowl. Add about 1/2 cup of olive oil/vegetable oil and taco seasoning. Mix it all together.

2Place ingredients on cookie sheet, and bake on middle rack for 20 minutes at 400 degrees.

3Take out & serve on shells with additional toppings! (sour cream, cheese, etc.) ALSO: you can place refried beans in taco shells, heat in the oven for 10 minutes, take out and then make the tacos if you love refried beans! ENJOY!
