tortilla and black bean bake

Needed to throw together something quick after I'd looked at the clock and thought...shoot it's almost dinner time and I haven't started! Everyone enjoyed this dish.

Ingredients For tortilla and black bean bake

    garlic clove finely chopped
  • 1/2 c
    chopped onion
  • 1 c
    chopped tomato (can always use canned if you need to)
  • 1/2 c
    chopped green onion
  • 1/2 tsp
    chili powder
  • 2 tsp
    cumin
  • 1
    8oz. can tomato sauce
  • 1
    16oz. can black beans-rinsed and drained
  • little bit of chopped cilantro
  • 12
    corn tortillas-soften in microwave in damp paper towel
  • 1 c
    shredded cheese-i use low fat

How To Make tortilla and black bean bake

    Heat oven to 350. Spray a large skillet with cooking spray. Add garlic, onion, tomato, green onion, chili powder and cumin. Cook until onions are tender over medium heat.

    Add tomato sauce and cook for about 5 mins. Stir in beans and cilantro, salt and pepper to taste.

    Spray a 9" casserole dish with cooking spray. Layer 4 tortillas, 1/3 of cheese, 1/3 bean mixture. Repeat 2 more times. Top with a little cheese.

    Bake covered for 20 mins., then uncovered for 10 mins. I've also added ground beef to the dish, but origially I hadn't any meat thawed out and it was delicious with out it!
