Ingredients For spanish rice

  • 1/2 c
    chopped onion (1 medium)
  • 1/2 c
    green bell pepper
  • 1
    clove garlic, minced
  • 1 Tbsp
    cooking oil
  • 1 tsp
    chili powder
  • 28 oz
    can tomatoes, undrained and cut up
  • 3/4 c
    uncooked long grain rice
  • 4 oz
    can diced green chile peppers, undrained
  • *** several dashes bottled hot pepper sauce (optional)
  • 1 c
    water
  • salt and pepper
  • 1/2 c
    shredded cheddar cheese (optional)

How To Make spanish rice

  • 1
    In a large skillet cook onion, green pepper, and garlic in hot oil until tender. Add chili powder; cook 1 minute more. Stir in undrained tomatoes, rice, chile peppers, hot pepper sauce, 1 cup water, 1/4 teaspoon salt and 1/8 teaspoon pepper. Bring to a boil then reduce heat. Simmer covered for about 20 minutes or until rice is tender and liquid is absorbed. Put in serving dish and sprinkle with the cheddar cheese. If needed, put dish in micro for 1 1/2 mins to melt cheese.
