rabid guacamole

This is called "rabid guacamole" because once I start eating it, I go absolutely nuts until it's finished. It's a bit spicy for small children who aren't used to it; I've found that reducing or eliminating the garlic and ginger, and substituting the jalapeno with green bell peppers is a fine way to make this "kid friendly". I've perfected this recipe to my personal taste over the last 5 years. I hope you enjoy it as well :)

Ingredients For rabid guacamole

  • 2 Tbsp
    ginger
  • 6
    avocados
  • 1
    tomato
  • 1/2
    red onion
  • 1/3 bunch
    cilantro, fresh
  • 1 tsp
    black pepper
  • 1 1/2 Tbsp
    salt
  • 4 clove
    garlic
  • 1
    jalapenos, fresh
  • 1
    tomatillos, fresh
  • 1/4 c
    key lime juice

How To Make rabid guacamole

    Peel and dice avocados, and cover with the key lime juice. Distribute salt and pepper over the top.

    Mince ginger, garlic, and jalapeno. Heat for about 2-3 minutes on medium high in a small fry pan.

    Dice tomatoes, tomatillos, and red onion. Chop cilantro finely and mix in all vegetables/spices.

    Mix until avocados reach desired consistency. Serve with corn chips, hard or soft shell tacos, or fajitas.
