WHEN HUBBY AND I FIRST GOT TOGETHER OVER 7 YRS AGO HE MADE THIS FOR ME SINCE THEN WE KEEP TWEEKIN IT.....IS VERT GOOD AND EASY TO MAKE

Ingredients For enchiladas

  • 1 lb
    ground beef[or turkey,chicken,pork]
  • 1 can
    refried beans or black beans
  • 1 jar
    red enchilada sauce
  • 1/2 lg
    onion,diced
  • 1/2 lg
    any color bell pepper,diced
  • 1 pkg
    10 in flour tortillas
  • 1 1/2 pkg
    mexican blend shredded cheese

How To Make enchiladas

    pre heat oven to 350
  • 2
    brown meat in med fry pan once brown add onion and pepper cook and stir til veggies soft add 1/4 of the sauce turn pan to low and cook til needed

    on cookie sheet spray with non stick spray the pour 1/2 the sauce onto pan take one tortilla at a time and slather in sauce on both sides add other1/2 sauce when needed stack on side of pan do all tortillas

    add the 1/2 pkg cheese to meat stir til it melts now make enchiladas put bout 1/2 c fillin in center of 1 tortilla roll up place on cookie sheet do the rest if any fillin left pour over top

    now take other pkg of cheese and put on top enchiladas[can stop here and put in fridge til ready for dinner] bake enchiladas for 10-12 min til cheese melted and bubbly....may take a few min more if ya put in fridge first no more than 20 min

    plate up and serve but be very careful eatin right away these are very HOT ya don't want to burn yur mouth heat hot not spice hot......
