Start Your gravy when turkey is resting. A degreasing cup is great for this. Turn heat down making sure the bits are scraped from bottom of pan, let cook on a medium low till gravy thickens. Turn heat off add Your sherry stir well and let sit for 5 minutes while stirring. Sherry is optional, if You like add more cranberry juice, for that burst of cranberry. Strain gravy. S&P to taste add fresh herbs. Put in gravy boat and enjoy with Your turkey!!!
