I like to prepare meals that don't require lots of time and effort but are still relatively healthy and tasty for my family. By doing the prep work for tacos the night before or in the morning before work, mealtime is more enjoyable for everyone! Add a side of chips and salsa, some sweet corn cake (mix is available in the mexican isle) and you've got an easy family meal.

Ingredients For taco night!

2 lbground beef
-
1 1/3 cwater
-
1/2 cold el paso taco seasoning mix
-
2 boxstand & stuff taco shells
-
1 pkgflour tortilla shells
-
2 cshredded cheddar cheese
-
2roma tomatoes, cored & chopped
-
1 csour cream
-
1 smchopped onion
-
1 jarsliced jalapenos
-
1 pkgshredded lettuce
-
salsa or picante sauce
How To Make taco night!

1Preheat oven to 350.

2Brown the ground beef in a skillet on top of stove. Drain and return to skililet.

3Stir in water and 1/2 cup seasonging mix; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened.

4While beef is simmering, place taco shells in oven for approximately 5 minutes - watch to make sure they don't overbrown!

5Add toppings of your choice and enjoy!
