If you like spicy sauce this one will do it. You can spice it up more the way you want it by adding more chipotle peppers. I can only use one. It is great over pasta or mashed potatoes. You can throw it in a taco or burritos too.

Ingredients For spicy double pork stew

  • 1 1/2 lb
    pork butt or shoulder cut into medium chunks
  • 1 lg
    onion quartered
  • 4 clove
    garlic
  • 1/4 tsp
    each marjoram and thyme
  • 2
    bay leaves
  • 1/2 lb
    ground pork or sausage
  • 1 lg
    onion diced
  • 4 clove
    garlic minced
  • 15 oz
    can crushed tomatoes
  • 1
    chipotle pepper in adobo sauce or more to your liking
  • 1/4 tsp
    each marjoram, thyme, and oregano
  • 1 Tbsp
    cider vinegar
  • 1/4 c
    cilantro chopped
  • salt and pepper to taste
  • splash of dry white wine
  • 1 c
    reserved pork juices

How To Make spicy double pork stew

  • 1
    Place the pork and next five ingredients in a crockpot and add enough water just to cover pork. Cook on low 6 to 8 hours. Remove pork and shred. Strain the broth and reserve 1 cup.

    Add some oil to a large skillet. Brown the ground pork with the chopped onion, and garlic. Throw a splash of white wine and scrap up bits from bottom and let most evaporate.

    Add the shredded pork, tomatoes,reserved broth, chipotle and seasonings. Bring to a boil and reduce to a simmer and simmer for 15 to 20 minutes. Remove from heat and stir in vinegar and cilantro
