sam’s three-stage curried chili

My 19 yo son worked all day creating this dish for a chili contest at work. THEY told him no one could make chili with lima beans and curry. When he told me about it, I agreed with THEM. Then I tasted it... Despite the ingredients, this chili is not “hot.” Instead, the layers of flavors give it an intense yet pleasant heat that warms rather than burns. It is without a doubt the best chili I have ever tasted. Oh, he won the contest!

Ingredients For sam’s three-stage curried chili
- STAGE ONE::

4 Tbspolive oil

1yellow onion, chopped
-
1red bell pepper, chopped
-
1red chili pepper, chopped
-
1green chili pepper, chopped
-
1 1/2jalapeno peppers, chopped
-
1hot banana pepper, chopped
-
4 clovegarlic, minced
-
3/4 Tbspcurry powder (plus 5 pinches)

1/4 Tbsphot madras curry powder
-
1 tspgaram masala (plus 2 pinches)
- STAGE TWO:
-
2 slicebacon, cut into pieces

1 lbground beef
-
1 lbground pork
-
8 oztempeh, broken up
-
3/4 Tbspcurry powder (plus 5 pinches)

1/4 Tbsphot madras curry powder
-
1 tspgaram masala (plus 2 pinches)
- STAGE THREE:
-
1/4 cworcestershire sauce
-
1 pinchgarlic powder (or to taste)
-
2 pkgsodium free beef bouillon (equivalent to 2 cubes)
-
1/2 bottlelight japanese beer
-
1 csake
-
1 ccoconut milk
-
2-14 oz candiced tomatoes
-
2-8 oz cantomato sauce
-
1-8oz cantomato paste
-
2 Tbspchili powder
-
1/2 Tbspground cumin
-
1 Tbspbrown sugar
-
1/2-1 tspground chipolte pepper
-
1 tspdried basil
-
1-1/2 tspsmoked paprika
-
2 tspsalt (preferably sea)
-
1/2 tspdried oregano
-
1/2 tspground black pepper
-
1-16 oz canlima beans, drained
-
1-16 oz cankidney beans, drained
-
1-16 oz canbutter beans, drained
How To Make sam’s three-stage curried chili

1Stage One Directions:

2Heat oil in a large skillet over medium heat.

3Add onion, peppers, garlic, curry powders and garam masala and cook, stirring and working the spices into the vegetables.
-
4Cook until the vegetables are softened and set aside.
-
5Cook’s Note: Throughout cooking process, taste and add curry powder and garam masala as desired. I added 5 pinches of curry powder and 2 pinches garam masala 3 times. You want to end up with layers of spices at different "ages" when you are done.

6Stage Two Directions:

7Heat a large skillet over medium-high heat.
-
8Add bacon to pan and cook 1 minute to render some of the fat.

9Add beef, pork, tempeh and stir. Add curry powder, hot madras curry powder and garam masala spices.

10Cook and stir in the hot skillet until browned and crumbly, 5 to 7 minutes, working the spices into the mixture.

11Add Worcestershire sauce and garlic powder. Sprinkle bouillon over mixture and add coconut milk, beer and sake.

12Stir in diced tomatoes, tomato sauce and tomato paste.

13Continue cooking, scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes.

14Cook’s Note: Throughout cooking process, taste and add curry powder and garam masala as desired. I added 5 pinches of curry powder and 2 pinches garam masala 3 times. You want to end up with layers of spices at different "ages" when you are done.

15Stage Three Directions:

16Stir beef mixture into the pepper mixture.

17Add chili powder, cumin, brown sugar, chipotle pepper, basil, smoked paprika, salt, oregano, and black pepper.

18Bring to a boil and reduce heat to medium-low.

19Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally.

20Mix beans into beef and vegetables. Continue to simmer until beans are hot, about 30 minutes more.
