I threw this together with leftovers and it turned out so yummy, I had to pass it along. I think I'll add black olives the next time I make this. They would go great with the pasta and pepperoni.

Ingredients For poor woman's pasta to die for

  • 1 lb
    spaghetti
  • 1 bag
    hormel pepperoni
  • 1 md
    eggplant cut in quarters
  • 1/2 jar
    ragu creamy mozzarella sauce
  • 1 tsp
    salt
  • 4 Tbsp
    canola oil for frying
  • 1 Tbsp
    basil, dried
  • 3 Tbsp
    parmesan cheese

How To Make poor woman's pasta to die for

    Pay fry the small bag of pepperoni and the cut up eggplant together until both are a little brown.

    While they are browning, cook the pasta in boiling water.

    Drain pasta and add to the frying pan with the pepperoni and eggplant pieces.

    Mix in 1/2 jar of Ragu Creamy Mozzarella Sauce just to heat and combine everything. Sprinkle basil and some parmesan cheese over top.
