This is a recipe I found in my "Gooseberry Patch Meals in Minutes" cookbook that I changed to suit our preferences. Make sure to wait to add the croutons til just before serving so they stay crunchy!!

Ingredients For hoagie salad

  • 1/2 c
    oil (vegetable, olive or canola)
  • 1/4 c
    apple cider vinegar
  • salt, pepper, garlic salt and dried oregano, to taste
  • 16 oz
    elbow macaroni, cooked
  • 1 pkg
    cherry tomatoes, halved
  • 1/2
    red or green bell pepper, diced
  • 4 stalk
    green onions, thinly sliced
  • 8 oz
    cooked ham, chopped/minced
  • 8 oz
    genoa salami, chopped/minced
  • 2 oz
    provolone cheese, shredded
  • 4 oz
    mozzarella cheese, shredded
  • 5 oz
    croutons, garlic flavored

How To Make hoagie salad

    In a small bowl, whisk together the oil and vinegar; add oregano, salt, and pepper to taste; whisk and set aside.

    Rinse cooked macaroni in cold water; drain well and transfer to a large bowl. Add remaining ingredients, except croutons, to the macaroni; toss gently.

    Pour oil/vinegar mixture on top; toss gently. Cover and refrigerate a few hours before serving, very important to do this step to allow the flavors to meld.

    Just before serving, top the pasta salad with the croutons. Serve and enjoy!!!
