Ingredients For baked three cheese and stout pasta

  • 1/2 lb
    your favorite pasta (we recommend penne)
  • 3 tsp
    unsalted butter, divided
  • 2 tsp
    minced shallots
  • 3/4 c
    stout beer
  • 2 c
    heavy cream
  • 1/2 c
    (2 ounces) grated gouda cheese
  • 1/2 c
    (2 ounces) grated swiss cheese
  • 1/2 c
    (2 ounces) grated cheddar cheese
  • 3/4 c
    breadcrumbs

How To Make baked three cheese and stout pasta

    Preheat oven to 350 degrees F. In a large pot of boiling water, cook pasta for 8 to 10 minutes. Drain and reserve.

    In a medium saucepan over medium heat, melt 1 teaspoon of the butter. Add the shallots and cook for 2 to 3 minutes. Add the beer and cook for about 5 minutes, or until reduced by half. Add the cream and cook for 5 minutes more, or until reduced by half. Remove from the heat and let cool to room temperature.

    Butter a 9 x 13- inch baking dish. In a large bowl, combine the pasta, cheeses, and beer mixture. Stir to blend. Transfer to the prepared dish.

    In a small saucepan over medium heat, melt the remaining 2 teaspoons butter. Stir in the breadcrumbs. Spoon the breadcrumb mixture over the top of the pasta and bake for 25 to 30 minutes, or until the filling is bubbling and the top is lightly browned.
