Ingredients For light creole omelet

    eggs
  • 1 md
    onion, sliced
  • 1/2
    green pepper,sliced
  • 1 md
    tomato, diced
  • 1 Tbsp
    ketchup
  • cooking oil spray

How To Make light creole omelet

  • 1
    Spray a heavy skillet with cooking oil spray. Saute' the onion, green pepper and tomato. Add the ketchup. Simmer until the vegetables are tender.( about 20 minutes)

    Make one omelet at a time. Beat 2 eggs until frothy. Add a pinch of salt and pepper and any other desired seasonings.Add 1/2 teaspoon water.

    Cook the omelet in a hot nonstick pan over low heat until the bottom is set and slightly brown. Place half of the creole sauce in the center. Fold in half and slide onto plate. Enjoy!!
