I got a recipe for greek spinach pies from a greek friend, and decided to make it even easier to make. I came up w/ these wedges of deliciousness! Great for a light lunch or dinner, or even a brunch. Calories: 251 Fat: 42 grams Carbs: 33 grams

Ingredients For greek spinach wedges

  • 10 oz
    refrigerated pizza dough
  • 1 sm
    onion, chopped
  • 1 tsp
    minced garlic
  • 1/2 tsp
    dried basil
  • 3/4 c
    low-fat cottage cheese
  • 4 oz
    crumbled low-fat feta cheese
  • 3/4 c
    skim evaporated milk
  • 8
    egg whites
  • 2
    10 oz pkgs frozen chopped spinach, thawed, squezzed dry.

How To Make greek spinach wedges

    Form dough into a ball. Heat oven to 350. Lightly spray a pizza pan w/ cooking spray, preferable olive oil cooking spray. On floured surface flatten dough, roll out to 12" circle.

    Spray lg skillet w/ cooking spray, place over medium heat. Add onion, garlic and basil. cook 4 mins. In bowl, beat cottage and feta cheeses. Beat in milk and egg whites until combined. Stir in onion mix and spinach.

    Pour mix over dough, bake 1 hr, or until a knife inserted in center comes out clean. Cool slightly, cut into wedges.
