This is a simple yet delicious Creole dish which my Grandmother made frequently.

Ingredients For creole dish

  • 4 lg
    zucchini
  • 6 lg
    fresh tomatoes
  • 3 lg
    sweet onions
  • 1/2 tsp
    oregano
  • 3 lg
    green peppers
  • 1/2 c
    olive oil
  • 1/4 tsp
    sweet basil

How To Make creole dish

  • 1
    Slice onions and cook in oil until golden brown. Wash squash, but do not peep unless a bit tough. Cut squash into 1/2 inch slices, arrange in layers with peppers, onions, oregano, and tomatoes, arrange sprigs of basil on the tomatoes.

    Bake slowly for about 30 minutes.
