black bean n rice

If you want you can add more tofu or spices. I use all fresh ingredient except the frozen corn but if you don't have tomatoes you can use 1 can of diced tomatoes. Juices and all.

Ingredients For black bean n rice

  • 1 c
    brown rice, cooked
  • 1 can
    black beans rinsed & drained
  • 1/2 c
    frozen corn thawed
  • 1/2
    onion, diced
  • 1/2
    sweet bell pepper diced
  • 2
    roma tomates diced
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 1 tsp
    onion powder
  • 1/2 tsp
    chili powder
  • 1 1/2 tsp
    creole seasoning
  • cooking spray
  • 1 Tbsp
    olive iol

How To Make black bean n rice

    In a 3 quart sauce pan start cooking brown rice in about a cup of water. (I use rice that needs to cook for about half hour.) add salt to flavor.

    In a fry pan add a Table spoon of olive oil and the add onion and bell pepper. Sprinkle with salt and pepper. Cook until lightly soft. Sprinkle with creole seasoning.

    Chop tomatoes.

    When the rice is done add beans, tomatoes, onion, peppers and all the seasoning. Stir.

    Taste . If you like it a little more spicy then add more creole seasoning. Stir and heat on low for a few minuet. then sever.
