Catfish is sometimes called a rough fish, however, this recipe will soon dispell any predetermined ideals you may have had. Catfish is considered a very good table fare by many, including yours truly.

Ingredients For oven-baked catfish

  • 1 to 1 1/2 lb
    catfish fillets
  • 1 c
    panko bread crumbs
  • 2 Tbsp
    finely grated parmesan cheese
  • 2 Tbsp
    sesame seed
  • 1/2 tsp
    cajun seasoning
  • salt and pepper
  • 1/2 c
    low fat greek yogurt
  • 1 Tbsp
    fresh dill, finely chopped
  • 1 Tbsp
    fresh parsley, finely chopped
  • lemon wedges

How To Make oven-baked catfish

    Heat oven to 400 degrees. Spray a large baking sheet with non-stick spray and set aside.

    Combine yogurt, dill, parsley and about a tablespoon of lemon juice in a shallow bowl

    Mix Panko, cheese, sesame seeds, Cajun seasoning with salt and pepper in another shallow bowl. Dip each fillet into the yogurt mixture, then roll in the Panko mixture.

    Arrange the fillets in a sincle layer on baking sheet and bake for 20 to 25 minutes, or until fish has a golden brown coating, is firm, and beginning to flake with a fork.

    Serve with additional lemon wedges.
