We all know that eating fish twice a week is good for us. Although I love, love my fried catfish, I had to find another way to fix the fish that would be healthier. Found this recipe in a really old cookbook of mom's. (I'd tell you the name of it except it's in threads and the covers are missing:)) I do remember eating this dish many times at mom's. Delicious! Enjoy!

Ingredients For incredibly good rice baked stuffed fish-connie's

  • 1
    3-4 lb. pike, perch or whitefish, cleaned and boned
  • 1/2 c
    butter
  • 2 Tbsp
    minced onion
  • 1/4 c
    dry bread crumbs
  • 1 1/2 c
    cooked rice, cooled
  • 1/2 tsp
    salt
  • 1/8 tsp
    pepper
  • 1/4 tsp
    paprika
  • 1/2 tsp
    basil
  • 1/4 tsp
    dill weed
  • 1 Tbsp
    minced parsley
  • 1 Tbsp
    fresh lemon juice
  • 2
    lemons, cut into slices

How To Make incredibly good rice baked stuffed fish-connie's

    Pre-heat oven to 350 degrees.

    Grease shallow baking pan.
  • 3
    Melt 1/4 cup butter in skillet.
  • 4
    Cook onion in butter until tender.
  • 5
    Remove onion from heat.

    Add crumbs, rice, salt, pepper, paprika, basil, dill, parsley and lemon juice. Toss lightly until mixed.

    Fill cavity of fish lightly with stuffing and fasten with skewers and string.

    Melt 1/4 cup butter in microwave.

    Spread 1/2 of butter over fish and sprinkle with 1/8 teaspoon paprika.

    Place half slices of lemon in center of prepared pan.

    Place fish on lemon slices; sprinkle with 1/8 teaspoon paprika.

    Memo: This fish must be basted frequently with remaining melted butter during the last 15 minutes of baking.

    Bake 45 minutes or until fish flakes easily when tested with a fork.

    Serve on heated platter; garnish with additional lemon slices and parsley.
