Ingredients For chicken parmesan meatballs

  • 1 1/4 lb
    ground chicken
  • 1/2 c
    dried breadcrumbs
  • 2 Tbsp
    minced onion
  • 1 Tbsp
    chopped parsley
  • 1/2 c
    grated parmesan
  • 1 clove
    minced garlic
  • 1 tsp
    fennel seeds
  • 1
    egg
  • Tbsp
    zest of one half lemon
  • salt and pepper
  • 3 Tbsp
    olive oil

How To Make chicken parmesan meatballs

  • 1
    Mix it all, except the olive oil. Form into meatballs, any size you want. Grease a baking sheet with olive oil and bake at 400 until they are browned and done in the middle.

    Very good with buttered noodles. Or with spaghetti. They freeze well, place on parchment lined baking sheet to freeze in one layer then after frozen put in zip lock bag.
