Ingredients For chicken curry with tomatoes and peas

1 clong grain rice, uncooked

2 Tbspolive oil, extra virgin

1 1/2skinless and boneless chicken breasts

2 tspcurry power

1 mdcooking yellow onion cut in 1/4 inch pieces

3/4 cwhite wine or chicken stock

2 clovefinely chopped

1 Tbspgrated ginger

1 smgreen sweet pepper cut into matchstick pieces1

1 ptgrape tomatoes cut in half

3/4 cfrozen peas, thawed
How To Make chicken curry with tomatoes and peas

1Cook rice according to package directions set aside. Heat 1 tbsp oil in skillet over medium heat,,season the chicken with the curry powder {cut the chicken into 2 inch pieces}..cook chicken for 3 to 4 minutes. transfer to a bowl.

2Add the wine to skillet and cook scraping up any brown bits., transfer to bowl with chicken.

3Wipe out the skillet heat the remaining oil add the onion, green pepper and garlic and cook 5 minutes, return the chicken and wine to skillet and add the tomatoes and peas and cook until heated through...Serve over rice.
