this was put together out of desperate necessity. found out I was having a bunch for dinner one evening and went rambling in my pantry for something to fix. Very easy and to this day my son still calls me for the recipe to give to someone. Enjoy!

Now you will have to make a roux. I use a medium white sauce for this dish. Melt butter in saucepan, and add flour. Mix thoroughly, and cook for 30 seconds. Now using a whisk add the milk ( you might have to add more milk to make it the consistency that you desire) Keep stirring to eliminate lumps and to keep it smooth. Add salt and pepper to taste.

when white sauce has come to the desired smoothness and thickness, pour over the pot of potatoes, peas, and spam. Stir gently to mix white sauce through and through. Bring to a gentle boil and turn off. Place a lid on pot to keep warm if not eating right away.
