Mexican food has to happen in our house about once a week. Prepping the pork tenderloin in the crock pot gives us flavorful, slow-cooked, fork-tender meat for these crunchy treats. They get finished in the oven with a quick 15 minutes to melt the cheese, or you could broil. This pork can be used for tacos, burritos or these taquitos - or in a sandwich roll topped with Cojita and cilantro! What I like about this is it gets its start before work and then dinner is really easy when I get home. These have just a bit of heat and really hit the spot.

Skip buying frozen taquitos and make your own pork taquitos at home. Not only is this an easy meal, but your family will also request them again and again. The majority of the meal is made in the slow cooker. Simmering with spices, oranges, and lime, the pork tenderloin is full of flavor. Once rolled and baked, the flour tortillas get delicious crunchy edges and are smothered in melted cheese.

Ingredients For shredded pork taquitos

  • 1 1/4 tsp
    garlic salt, divide out 1/4 tsp
  • 1 1/4 tsp
    cumin, divide out 1/4 tsp
  • 1 1/4 tsp
    smoked paprika, divide out 1/4 tsp
  • 1 tsp
    oregano
  • 1 tsp
    onion powder
  • 1/4 tsp
    ancho chili powder (or other chili powder)
  • 1
    orange, sliced in half
  • 1
    lime, juiced
  • 1
    small onion, cut in large chunks
  • 2 clove
    garlic, large dice
  • 1/2 c
    chicken broth
  • 1/2 c
    water
  • 1 lb
    pork tenderloin, trimmed of silver skin, cut into large chunks
  • 10
    flour tortillas
  • 3/4 c
    shredded cheese
  • 1/2 c
    cilantro, roughtly chopped
  • serve with sour cream, avocado, salsa, etc

How To Make shredded pork taquitos

  • Spices added to two bowls.
    1
    Add 1 tsp of each spice to a small bowl. (Keep out 1/4 tsp of garlic salt, cumin, and smoked paprika in another bowl.)
  • Onion, garlic, lime and orange juice, and cut fruit in a bowl.

    Cut the onion and garlic, juice the lime, and cut the orange in half. Keep both halves of the orange and lime after juicing.
  • Trimmed pork tenderloin cut into chunks.

    Trim the pork tenderloin. Cut into large chunks.
  • Pork covered in the spice rub.

    Sprinkle with the spice rub. Turn, sprinkle and rub into the other side(s) of the pork pieces.
  • Onion, garlic, fruit juices, rinds, and pork in the Crock Pot.

    Add onion, garlic, fruit juices, orange and lime rinds, and seasoned pork to the Crock Pot.
  • Pouring chicken broth and water into slow cooker.

    Pour in chicken broth and water. Set to cook for 4-6 hours.
  • Cooked pork shredded in a bowl.

    An hour before the pork is done, use two forks to break up the pork pieces into shreds.
  • Sprinkling remaining seasoning over shredded pork.

    Sprinkle remaining garlic salt, cumin, smoked paprika, and chili powder over the shredded meat.
  • Shredded pork back in the slow cooker continuing to cook.

    Add back to the slow cooker and stir. Cover and cook for the final hour. (If you're headed off to work right after pressing the "start" button, stir these spices into the chicken broth before adding to the Crock Pot.)
  • Rolling the pork stuffed tortillas.

    When the pork is finished, heat oven to 400 (or use broiler). Fill tortillas on one side and tightly roll them into taquitos. Place into an oven-proof baking dish seam side down.
  • Wrapped tortillas in a baking dish.

    Repeat with remaining tortillas.
  • Cheese sprinkled over the pork taquitos.

    Sprinkle evenly with cheese.
  • Baking taquitos until cheese is melted.

    Bake 12-15 minutes or until cheese is melted (or broil 3-5 minutes until cheese is melted). Top with cilantro.
