Ingredients For ratatouille

  • ¾ medium onion, diced
  • ¼ cup smart balanced omega oil
  • 1 small zucchini, cut into ¼-inch cubes
  • 1 clove garlic, finely chopped
  • 1 small green bell pepper, cut into small pieces
  • 2 tomatoes, peeled and coarsely chopped
  • ¾ small eggplant, peeled and cubed
  • ½ tsp basil
  • ½ tsp oregano

How To Make ratatouille

  • 1
    Sauté onion in oil in a large skillet until transparent. Add all remaining ingredients. Cover and cook over medium heat for about 45 minutes, stirring occasionally. Add a little water if necessary. May be served hot or chilled.
