My 5-year-old daughter loves this and the mushrooms don't seem to bother anyone that's tried it, even if they don't like mushrooms!

Ingredients For porcupine

1 lbground beef

1 c5 minute white rice, uncooked

1 lgegg

1 tspsalt

1 tsppepper

1 cancream of mushroom soup

3/4 canmilk (use soup can to measure)
How To Make porcupine

1Put soup and milk in small sauce pan on medium low heat (don't forget to stir a few times so it doesn't burn and/or stick to the pan), and preheat oven to 350 degrees.

2Mix remaining ingredients (ground beef, rice, egg, salt, & pepper) in medium-large bowl.

3Make meat mixture into 4 equally sized balls and place in an 8" x 8" x 2" glass pan and cover with warmed soup mixture. (Sprinkle a little more salt and pepper on top of each soup-covered meat ball if desired.)

4Cover with aluminum foil and bake at 350 for about 50 minutes or until meat is cooked through. (Best served with mashed potatoes to mix all together and use soup mixture as gravy.)
