old-fashioned meatloaf

Recipe by

The original recipe came from a local newspaper. I made a few tweaks to make it my own. I like the texture created by the cracker crumbs (I use a buttery cracker) and the grated vegetables. I usually shape the mixture into 2 or 3 loaves and freeze the others for future meals. Smaller loaves may not need as much cooking time, so I recommend checking the internal temperature for desired doneness. This has become a real family favorite.
