I never use those packaged "Helper" meals from the grocery store, with the exception of this recipe. My kids love this salad recipe and there are never any leftovers.

Ingredients For deluxe taco salad

  • 1 lb
    ground beef
  • 1 box
    hamburger helper, crunchy taco flavor
  • 2 c
    hot water
  • 1 c
    milk
  • 1 can
    refried beans
  • 1 Tbsp
    oil
  • 3 Tbsp
    water
  • salt and pepper
  • tortilla chips
  • shredded cheddar or jack cheese
  • lettuce, chopped
  • tomato, diced
  • avocado, diced
  • green onions, diced
  • black olives, sliced
  • taco sauce, any flavor
  • sour cream

How To Make deluxe taco salad

    First prepare Hamburger Helper according to package directions but decrease water called for by 1/4 of a cup. Only go to step 3, take the package marked Topping and throw it away. I think it's nasty but you could save it for something else, but do not use in this recipe. Reserve the pack of corn chips for later in the recipe. Simmer on very low heat til all liquid is absorbed and rice is tender, stirring occasionally. While that is cooking, in a small pan add oil, 3 T. water and salt & pepper to refried beans and heat over low heat until hot. On a plate, layer your ingredients in this order: Tortilla chips, Hamburger Helper in the middle of the chips, 4 dollops of beans around the sides, a light sprinkle of cheese, lettuce, tomato, onion, olives and avocado. Lightly drizzle taco sauce all over. Add another good sprinkle of cheese all over the top. Place a big dollop of sour cream on the top and add a few of the corn chips on top of it for garnish. Enjoy!
