The base of this chili came from my mom who was raised in Bandera, Texas. My Dad, who was raised in Abilene, Texas made some modifications to it...hence the name. Throw in some cornbread, a little Lone Star Beer and Bob Wills music and you've got yourself the perfect Texas night, (even transplants can pull it off with no one the wiser). Ingredients For bandera red 5 alarm chili

2 Tbspcrisco oil

2 lbbeef stew meat cut into cubes (you can also use venison for a leaner chili)

1 cchopped onion

2-3minced cloves of garlic

1green bell pepper seeded and chopped
-
12 oztomato paste
-
2 1/2 cof water
-
2jalapenos (i use the two and throw in a ghost pepper for the 5 alarm effect)

2 Tbspchili powder
-
1/2 tspcrushed red pepper flakes

1/2 tspsalt
-
1/2 tsporegano, dried
-
1/2 tspcumin
-
1 15 ozcan of pinto beans (optional. as no true texan puts beans in their chili, but we have to make some concessions for others...lol)
How To Make bandera red 5 alarm chili

1Heat the oil in a large heavy pan and brown the meat on all sides.

2Add the onions, garlic and peppers and fry them with the meat for about 5 minutes.

3Add all the other ingredients, Except the beans and simmer for 2 hours. Add the deans and simmer for another 30 minutes
