I know this is the most simple and obvious recipe. But this recipe goes way back for me. My dad was the ultimate pizza maker in the house. He made homemade pizza from homemade pizza dough and homemade sauce and sausage he made himself. He had a garden in the backyard with every vegetable and Italian needs. So we had some decked out pizzas. But one thing my dad made when I was a child too was Pita Pizzas. We have a local bakery that made fresh pitas, Alladin's Bakery. They provided pitas all over the United States and we were lucky to just have them 20 minutes away. On my dad's way home from work from Miceli's Dairy (where we got freshly made cheese), he would stop at Alladin's and get fresh pitas. Bring them home and we would all customize our pita pizzas. We would make like 20 at a time. I introduced this method to my husband because he loves pizza so much and he fell in love with it. So this recipe is more of an ode to my dad than anything else. I spent many a nights making them with my dad and the rest of the family. So go and enjoy make a party of it and be creative in making your own Pita Pizza! Also to mention, KIDS LOVE MAKING THEIR OWN PITA PIZZAS!!!! Also this is an easier way to get the taste of a real Italian Pizza like the ones you get in Italy. Thin crispy edges and soft middle.
