I kept putting this recipe off - tuna steaks are expensive! But we finally had something to celebrate, so we bit the bullet and bought some. Except, that my husband overbought (who's going to complain if he's doing the groceries, right?!?), so we invited friends. And I overcooked it. My fault. AND IT WAS STILL ABSOLUTELY DELICIOUS. So, other than expense, it's an easy, quick, foolproof recipe. How wonderful is that? Post-note: We tried again and couldn't get the same amazing results. So, we changed it by marinading longer and turning the marinade into a glaze.

Ingredients For tradewinds tuna

16 oztuna steaks, cut into 4 equal pieces 1/2" thick

2 Tbspsoy sauce

1 Tbspwhite wine vinegar

1 Tbspsherry

1 tspsesame oil

1/4 tspground ginger
-
1/4 tspsugar

1/8 tspgarlic powder
-
1 Tbspcorn starch
-
1 tsptoasted sesame seeds

fish substitutes: swordfish, salmon, halibut steaks, tilapia, nile perch, or catfish fillets
How To Make tradewinds tuna

1Pat fish dry with paper towels. In an 8" square glass dish, combine soy sauce, vinegar, sherry, sesame oil, ginger, sugar, and garlic powder. Place tuna steaks in mixture, turning to coat both sides. Let stand at least 20 minutes to marinate, but longer would be better.

2Drain marinade into a small pan. Mix corn starch with 1/4 cup cold water; pour into pan. Bring to a boil over medium-high heat. Reduce to medium, stirring occasionally, until thickened into a glaze.

3While marinade is reducing, cover the glass dish with vented plastic wrap. Rotating dish midway through cooking, microwave on high 3-1/2 to 4-1/2 minutes, or until tuna is no longer opaque. Let stand 2 minutes.

4Place tuna on serving plate. Spoon some of the glaze over top. Sprinkle with toasted sesame seeds. Serve immediately.
