Ingredients For stuffed jumbo shrimp scampi

  • 2 lbs. large shrimp or scampi,in the shell
  • 1 tbsp. margarine
  • 1/4 cup celery, finely chopped
  • 1 small onion, finely chopped
  • 1 tbsp. margarine, melted
  • 1/2 cup bread crumbs
  • 1/4 tsp. basil
  • 1/2 tsp. parsley, chopped
  • 1/4 tsp. garlic salt

How To Make stuffed jumbo shrimp scampi

    Peel Shrimp, leaving shell on tail section. Lay on back. (the shrimp, not you!)

    With sharp knife, split almost through (butterfly cut). De-vein.

    Mix celery, onion and margarine in a 1 quart casserole. Microwave 3 minutes on high or till onion is transparent. Stir in remaining ingredients. Brush shrimp with melted margarine.

    Spoon 1 Tbsp. of mixture into butterflied area of shrimp. Put in baking dish with tail resting straight up on side of dish. Microwave 3 minutes on high or til shrimp are opaque. Don't overcook. Time varies slightly with size of shrimp. Makes 4 servings. 200 calories per serving.
