Salmon has been one of my favorite fishes for a long time. This fresh water fish is easy to prepare and has a delightful soft texture.

Ingredients For grilled salmon in lime sauce

1 smtomato, chopped

1 smred bell pepper, chopped

2green onions, thinly sliced

2/3 clime juice

2 Tbspvegetable oil

1/2 tsplime peel, grated

1/2 tspcayenne pepper

1 1/2 lbsalmon fillet
How To Make grilled salmon in lime sauce

1Combine tomato, red pepper, onions, lime juice, oil, lime peel and pepper in large bowl; mix well. Cut salmon into 4 pieces. Place salmon in marinade and turn several times to coat. Refrigerate 30 minutes.

2Drain and discard marinade. Place each piece of salmon and about 1/3 cup vegetables on piece of heavy duty aluminum foil; fold foil around the mixture and seal tightly.

3Grill, covered, over medium heat for 15 to 20 minutes or until salmon flakes easily with a fork.
