Salmon has been one of my favorite fishes for a long time. This fresh water fish is easy to prepare and has a delightful soft texture.

Ingredients For grilled salmon in lime sauce

  • 1 sm
    tomato, chopped
  • 1 sm
    red bell pepper, chopped
  • 2
    green onions, thinly sliced
  • 2/3 c
    lime juice
  • 2 Tbsp
    vegetable oil
  • 1/2 tsp
    lime peel, grated
  • 1/2 tsp
    cayenne pepper
  • 1 1/2 lb
    salmon fillet

How To Make grilled salmon in lime sauce

    Combine tomato, red pepper, onions, lime juice, oil, lime peel and pepper in large bowl; mix well. Cut salmon into 4 pieces. Place salmon in marinade and turn several times to coat. Refrigerate 30 minutes.

    Drain and discard marinade. Place each piece of salmon and about 1/3 cup vegetables on piece of heavy duty aluminum foil; fold foil around the mixture and seal tightly.

    Grill, covered, over medium heat for 15 to 20 minutes or until salmon flakes easily with a fork.
