We are well into the summer and the grillers have come out of their hibernation. Every backyard in the community has a grill and the respective grill master. It is up to this grill master to decide what the family and friends eat this weekend. Will it be the BBQ pork, ribs, or the chicken or the fresh, mouthwatering alternative – grilled mahi mahi. It’s easy and will have your family coming back for more.

Ingredients For grilled mahi mahi

  • 1 c
    dry red wine
  • 3 Tbsp
    sliced green onions
  • 3 Tbsp
    lime juice
  • 2 Tbsp
    brown sugar
  • 1/2 tsp
    salt
  • 1 clove
    garlic
  • 4
    (6 oz.) fresh or thawed mahi mahi fillets, about 1/2-inch thick
  • fresh lemon wedges
  • more sliced green onion, if desired

How To Make grilled mahi mahi

    In a small saucepan combine wine, green onions, lime juice, sugar, salt and garlic. Bring to a boil; reduce heat. Simmer, uncovered, for 5 minutes. Cool.

    Preheat the grill to medium. Lightly coat a grill basket with nonstick cooking spray.

    Rinse fish; pat dry with paper towels. Brush fillets with wine mixture. Place fish in the grill basket. Tuck under any thin edges of fish. Grill for 4 to 6 minutes or until fish flakes with a fork (145 degrees F.), brushing with wine mixture frequently.
