Ingredients For chili citrus salmon tacos

  • 1 clove
    garlic
  • 1
    serrano chile pepper seeded and chopped finely
  • 2 Tbsp
    olive oil divided
  • 2 Tbsp
    water
  • 2 Tbsp
    orange juice concentrate
  • 2 lg
    navel oranges peeled, pitted and segmented
  • 1 c
    cilantro, fresh
  • 1/2 c
    red onion sliced thin
  • salt and pepper
  • 1 lg
    salmon filet cut into serving sections (about 8 per filet)

    corn or flour tortillas

How To Make chili citrus salmon tacos

  • 1
    place chopped garlic and Serrano in 1 tbs olive oil and sauté over medium heat until soft. DO NOT BURN! remove and save in small dish. This will be the sauce/dressing to spoon over salmon as you build your taco. when cooled add oj concentrate and water. mix well.

    Cook salmon sections in 1 TBS evoo 3 to 4 minutes on each side. S and P to taste. Cook fish until golden brown and opaque inside. when fish is almost done you can remove from heat and cover pan.

    while fish is cooking chop cilantro, slice red onion, peel and prep red onion. I put all these ingredients in small serving dishes. Prepare tortillas however you like.

    To build taco place fish in tortilla, ( break up with fork ) drizzle with dressing, add orange segments, cilantro and red onion. Wah Lah!
