When I was about 21, I had a second job that I worked mostly on the weekends along after my full time job during the week. I worked nights with my best friend who was the bartender. This sandwich is the best sandwich ever. The place I worked at was Panini's Bar and & Grill. They are famous in Cleveland/Ohio area for being the biggest sandwich that hits the spot everytime. The sandwich is also know in the state of Pennsylvania that says they are the originators by Primanti's. This whole time working at Panini's is special to me now more than ever because the owner who hired me when I needed some extra help since I lived on my own. She passed on this passed week and she was only 46. Her name is Lisa and she has 5 beautiful children as young as 2 twin 11 year old girls. After the wake my best friend who was the bartender and myself went to Panini's to cheer to Lisa and we toasted with our sandwiches to such a wonderful person. I can't tell you how many of these sandwiches I've made, probably thousands. We were so busy on the weekends it was crazy, so from the in house orders and takeout, I would be swamped at the grill, sometimes with 10 sandwich preps lined up along the grill. It was always freshly made to order. It includes coleslaw and you can use a cream based coleslaw or an oil and vinegar base with salt and pepper. I always had to make the slaw and it was a oil, vinegar, pepper, salt base. I always had to make huge tub batches maybe over 50 pounds worth for the day or night. So it's up to you how you make it but it was always a cabbage mixture slaw. My boss was a great friend, boss, mom and person. So this recipe is in her honor and to raise awareness on Celiac Disease.
