I love this recipe, because I can make it with whatever meat I happen to have. It is a wonderful way to use up leftovers.

Ingredients For stir-fry

  • 3 c
    meat (you can use steak, roast, beef, chicken, shrimp etc)
  • 3 Tbsp
    butter
  • 20 oz
    canned pineapple, drained (save liquid)
  • 2 Tbsp
    soy sauce
  • 1 Tbsp
    sugar
  • 1/4 tsp
    salt
  • 2 Tbsp
    cornstarch
  • 3 c
    vegetable blend or oriental vegetable mix
  • 5 c
    hot cooked rice
  • 1 Tbsp
    vinegar
  • 2 Tbsp
    water, to mix with cornstarch

How To Make stir-fry

  • 1
    Melt butter in skillet over medium heat. Add meat and stir occasionally for 4 minutes.

    Add enough water to the pineapple syrup to measure 2 1/4 cups water. Stir pineapple liquid, vinegar, soy sauce, sugar and salt to skillet and simmer 5 minutes.

    Mix cornstarch with a little water. Gradually stir into meat mixture, stirring constantly, until mixture becomes thick and bubbly.

    Stir in pineapples and vegetables. Cook about 3 minutes. Serve over hot rice.
